For the red Manila 2022, Blaufränkisch is half whole-cluster and half destemmed, spontaneously fermented and macerated for ten days in amphora with gentle punchdowns, then finished and bottled unfined and unfiltered. The result is fresh and transparent: dark stone fruit, spice, balanced acidity, fine tannin, and 12.5% alcohol that keeps everything weightless.
