Dila-o is a 50\/50 blend of Rkatsiteli and Mtsvane fermented in qvevri (large clay vessels buried underground) with native yeasts and bottled unfiltered. Skin contact is intentionally short — about a month — making this a lighter, more approachable take on amber wine, without sacrificing any of its textural intrigue.
