Pascal Doquet is one of the Champagne's great Chardonnay specialists with a swath of old vines across the Côte des Blancs' greatest villages. His dedication is to his vines, as you might expect with such high profile vineyards, all farmed organically with as minimal intervention in the cellar as possible.

This hails from "Les Migraines" a vineyard in the great Côte des Blancs village Le Mesnil-sur-Oger. The oldest vines here were planted in 1929. If Le Mesnil sounds familiar to you, it's likely because of the work that the famed Champagne houses of Krug and Salon have done. But if anyone has every has ever tried those wines, they know what they require is time (and a lot of $$$).

Luckily for us Pascal allows ample aging before release and then at a fraction of the cost of his neighbors. It’s as impressive of a non-vintage Champagne and is you'll find anywhere.

This is 75% from 2007, 21% from 2006 and 4% from 2005. It was fermented in a mixture of enamel and neutral barrel and put into bottle in April, 2008 (disgorged January, 2015) with 7 grams dosage.

There are aromas of ginger, anise, zest and sandalwood, and the Champagne emphasizes the spicy characteristics of Le Mesnil. The bulk of the assemblage being from the 2007 vintage also contributes to this stylistic leaning, but Pascal harvested nearly three weeks later than most of his neighbors in 2007 which adds a notable richness and body to the mid-palate.

Pascal started making wine at his family's estate in 1995 and established Champagne Pascal Doquet in 2004 when his father retired. He farms just under 9 hectares of vines including prime parcels in Vertus, Le Mont Aimé and Le Mesnil-sur-Oger. Natural farming and dedication to vineyard health is integral to Pascal and the domaine has been certified organic since 2010.

Plant-based treatments are more commonly used as Pascal seeks to reduce his use of even copper and sulfur. He fully believes that his focus on vineyard management allows him to express subtleties of his terroir and to make honest wines. We think you can definitely taste the difference!

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs. Toast with these wines, for sure. But also treat them like the great wines they are: taste, drink, explore!
