The fruit comes from a single vineyard planted in 1937 on the left bank of the Serein, where a deeper layer of clay sits over the Kimmeridgian limestone bedrock — that clay is why left-bank Chablis tends to come out richer, and why Courgis is usually the weightiest of Piuze's village cuvées. A Montrealer who came to Burgundy in 2000, Piuze picks by hand with a team of 70 in a region where roughly 90% of the crop is machine-harvested, and he gave each of his seventeen growers a slice of the business to keep the fruit coming. The 2025 was fermented and aged in tank with 20% in barrel — a call made for this vintage rather than a house formula; earlier releases of this same cuvée saw no wood at all.
