Seiichi Saito blends three parcels: Les Boutières at the foot of Savigny-lès-Beaune on heavy clay-marl (planted 1983-84), the 1934 Aligoté on the clay-limestone plateau of Les Perrières above Échevronne, and a cool southwest-facing plot called En Nair just outside that same village. Saito is Japanese, came to Burgundy in 2008 after wine school in Beaune, and worked at Bize, Mugnier, Rousseau and Leflaive before starting Petit-Roy in 2017.
