Philip and Rosalie Lardot got hold of a 0.3-hectare piece of it in 2021, planted mostly in the 1950s and '60s, and this is only the second wine to come off it. The name honors the Romanesque chapel built in 1144 at the foot of the hill. The Lardots don't use residual sugar to soften Mosel acidity at all; instead the fruit gets a few hours of maceration before pressing, ferments in barrel on full lees, and sits in tonneau for 22 months before going into bottle unfiltered at 12% alcohol.
