The components are aged 15 to 30 years in old 200- and 400-litre oak barrels, which is well past the ten years XO law actually demands, and the extra time shows in the rancio rather than in loud new wood. Ageing happens in Prunier's cellars at Gimeux, where the river next door keeps the air humid and the spirit soft as it matures. Prunier owns no vines — the house has worked as a selector and ager of others' eaux-de-vie since it began shipping under its own name in 1769, and the Burnez family has run it since the last direct Prunier male descendant died childless in 1918.
