He didn't take the fruit from the Premier Cru slopes around the family home in Mareuil-sur-Aÿ. Instead it comes from a single parcel in Festigny, in the little Vallée du Flagot off the Vallée de la Marne, where clay-rich soils give Meunier exactly what it likes. (Châtaigniers means \"the chestnuts,\" in case you were wondering.) Fabrice is the third generation here and farms organically, horse ploughing included. In 2004 he perfected what he calls the méthode Fabrice Pouillon, which creates the bubbles with no added sugar at all, only the natural sugar of the estate's own grapes. He says he now makes all his wines this way.
