The wine ferments with native yeasts in century-old manzanilla butts without temperature control and spends roughly eight months there, the last stretch under a light veil of flor, which lends a manzanilla accent without ever becoming manzanilla. Of the UBE range this is the most direct and immediate: citrus, salt and a fine pastry note.
