Les Prévolles is his Beaune cuvée, from roughly fifty-year-old vines on marl and clay, a site he says reliably turns out a spicy wine with a clove note. The farming has been chemical-free since 1986, back when his uncle Thierry Guyot had the vines. 2018 was warm, dry and generous in Burgundy, a vintage that rounded off the Côte de Beaune's harder edges, and at eight years this is in a good place - open, spicy, still fresh.
