In the late 1990s René Rostaing and his wife bought a property in the Coteaux du Languedoc near Nîmes, originally called Puech Chaud and now known as Puech Noble, chasing something he couldn't get at home: Syrah on limestone. The estate sits on a small plateau carpeted in galets roulés, the rounded stones you find in parts of Châteauneuf-du-Pape — except this plateau sits 150 meters higher, which makes it markedly cooler and gives the wines a freshness the Rhône Valley floor can't match. Small amounts of Mourvèdre and Grenache round out the plantings.
