Rolet's Arbois bottling is about as classic an introduction to the style as you'll find. The 2018 was fermented with native yeast from 40-year-old vines growing on gray marl at 280–380 meters, then spent six years in barrique. Rolet takes the fruit for its Vin Jaune from the south-west-facing 'Chagnon' lieu-dit in Montigny-lès-Arsures. Savagnin ripens late, so it's picked by hand at the very end of harvest. A good one for the dinner table: Arbois was France's first AOC, created in 1936. Désiré Rolet started the domaine in 1942, and his four children joined the family business in 1958. The vineyards are constantly ploughed, with no herbicides or pesticides. Don't serve it ice-cold.
