Romain le Bars spent seven years alongside Eric Pfifferling at L'Anglore before starting his own label, and that apprenticeship - energy over power - is audible in everything he bottles. He came to the southern Rhone from Paris in 2012, bought 1.2 hectares in Tavel in 2018 and made his first vintage in a garage; he now farms around nine hectares organically across Tavel, Lirac and the Vin de France land around them, with native yeasts, no fining or filtration and very little sulfur. Pousse Cailloux is fermented by carbonic maceration to keep the fruit bright and lifted, then raised in a mix of tank and barrel for a little texture. At 13% and bottled as Vin de France, it is exactly the kind of wine that has no business being weighed down by an appellation.
