Les Fourneaux lies out at Fleys on the right bank, tucked into a side valley off the Serein, facing south and east with the north wind blocked; poor stony clay over Kimmeridgian marl and a great deal of collected sun give it generosity rather than austerity. Billaud works two parcels on the steep part of the slope, farmed organically under contract with the grower, and raises the wine in tank so the ripeness comes through unpadded. He has been on his own since 2009, when he left the family's Domaine Billaud-Simon, and works from a gravity-fed cellar in the middle of Chablis.
