Samuel Billaud is one of the most talented modern voices in Chablis, and his Séchet bottling shows just how much nuance can come from a single slope. Sourced from a prized subsection of the Vaillons Premier Cru—a steep, south-facing site with limestone soils and excellent drainage—this wine offers laser-like clarity with subtle depth.

The 2020 vintage brings richness and drive in equal measure: lime zest, green apple, crushed oyster shell, and smoky flint, all carried on a frame of bright acidity and gentle lees texture. There’s a little more mid-palate flesh here than in cooler years, but the wine never loses its mineral backbone or mouthwatering finish.

Billaud works with native yeasts, minimal oak (mostly neutral), and long aging on fine lees, allowing the vineyard’s natural precision to shine. The result is a Premier Cru Chablis that drinks with Grand Cru posture, especially after a year or two in bottle.

Pair it with shellfish, grilled white fish, or creamy dishes that benefit from a wine with both cut and class. Drink now for its vibrant energy or cellar for 5–10 years to watch the chalk and citrus deepen.
