Sebastien Girost farms a tiny 4-hectare family estate in the village of Congy, in the Vallee du Petit Morin, where his family has worked the vines for nearly a century; he began estate-bottling in 2002. Each of his 22 plots is vinified separately, partly in neutral oak from top Burgundy and Champagne growers (Egly-Ouriet among them), with farming as natural as the vintage allows. The Brut Reserve is built around half Meunier from the nearly century-old Dure Peine lieu-dit, rounded out with Chardonnay from Cornabeaux (planted 1969) and Pinot Noir from Morrettes (1990). Malo is blocked for tension.
