Seves is a brand-new answer to it: Marie Baltus and Foulques Bertholet met at viticulture school in Beaune, trained with a roll call of Aligote's true believers, and founded their own domaine in 2023 with a single parcel. That parcel is Les Corderes, 0.63 hectares planted in 1981 on stony clay-silt at the southeastern edge of the village. It is the highest vineyard in the appellation and it faces northwest, which in a warming Burgundy is starting to look less like a handicap and more like a head start.
