Domaine Simon Bize is Savigny's benchmark house, now led by Chisa Bize, and the regional reds are made exactly like the premier crus: substantial whole-cluster fermentation, native yeasts, no new oak. That stem inclusion is the signature, adding a lift and a savory earthiness that keeps ripe fruit honest. 2023 gave Pinot Noir an abundant crop of clean fruit and reds that are fresh and aromatic without overripeness.
