Müller deliberately keeps his old vines rather than replanting them, and here that patience pays off in a Kabinett with more depth than the style usually promises. The fruit is all picked by hand, and the vines never see herbicides or pesticides. Müller runs a small, third-generation, 11-hectare estate in Konz, in the Saar Valley (the cool, steep side valley that feeds into the Mosel), and he's one of the growers giving its red-slate sites their due.
