Everything here is done the hard way - roughly three hectares of bush vines around Martigne-Briand, farmed biodynamically and worked by horse, yields near 25 hectoliters per hectare, a vertical press, spontaneous fermentation in used 228-liter barrels and 15-hectoliter foudres, and Vin de France on the label because he would rather the wine make the argument than the appellation.
