Suenen took over the family domaine in 2009 at 23, converted the vineyards to organics — certification came in 2019 — and rebuilt the cellar around indigenous yeasts, the old enamel tanks he inherited from his grandfather, seasoned oak and concrete. The blend spends about nine months in tank and cask before bottling, then a long second ageing on the lees, and is finished Extra Brut.
