Aubert de Villaine and Jacques Seysses went looking for a project in the South of France in the 1980s and settled on an estate at Nans-les-Pins in the Var, drawn by clay-limestone soils that in places reminded them of Burgundy and by 380 meters of elevation, which means cool nights and preserved acidity. They converted the vineyards to organic farming - they're certified - planted cover crops between the rows to build up the topsoil, and cut yields. The rosé is Cinsault-led with Grenache, Syrah and Merlot, harvested at night, gently pressed, fermented cool in stainless steel and rested on its fine lees.
