At Uehara Shuzo that pressing is done on a tenbin, a wooden beam weighted with stones that takes three days to do what a modern machine does in half a day, so isolating the middle cut is a real decision rather than a marketing one. The brewery has been at it in Takashima, on the northwest shore of Lake Biwa in Shiga, since 1862 and is now in its seventh generation; the sake is yamahai, with no cultured yeast added, fermented in wooden vats from Yamada Nishiki rice milled to 55 percent. Expect something round, savory and softly acidic rather than clean and aromatic.
