The Vacheron cousins farm the whole estate biodynamically, harvest by hand, and ferment on indigenous yeasts in large upright wooden tanks of 25 to 36 hectoliters, then rack the wine back into that same wood for a year before bottling it unfiltered — large wood rather than small barrels, which builds texture without loading the wine with oak. 2022 was hot and dry through a fierce July, but rain arrived just before the early-September harvest and restarted maturation, and the acidity held up far better than the summer suggested it would. Four years on, it has filled out and is drinking beautifully.
