The Pinot Grigio comes only from hillside sites there and in neighboring Collio, from vines 12 to 25 years old, bought from growers who farm organically to Giampaolo's standards. That's a lot of care for an everyday white. Giampaolo's view is that too many wines chase high acidity and low alcohol at any cost, which in warm years means picking early and getting nothing but green, sour malic acid. He'd rather the wine show the climate it actually came from.
