Laurence and Fabien Dinocheau farm 13 hectares on the slopes of the Cher in Touraine, land first worked by their great-great-great-grandfather, and they took over in 2006 with a deliberately minimal approach in both vineyard and cellar. The soils are chalky limestone and sandy clay, which is where the wine gets its lift and its fine, powdery tannin. Almost nobody plants this grape anymore, which is a shame and also the reason it's worth seeking out.
