It's one of several Domprobst Auslesen the estate bottled separately that year. Cool, mostly sunny harvest weather concentrated both flavour and acidity, but uneven flowering cut the crop enormously, so there was little of this wine to begin with. Picking was selective, starting in mid-October, and in the first week the family took only bunches with very clean botrytis. Domprobst is the steep core of the Graach sites: weathered Devonian slate under a deep, clay-rich topsoil, which the house says makes wines wilder, earthier and slower to open than those from the surrounding Himmelreich. That's exactly the kind of site where an Auslese is worth waiting for. (Trivia for the table: the name comes from the Cathedral Provost of Trier, who was owed a third of Graach's wine tithes.) The estate farms just 4.2 hectares of ungrafted old vines and makes only Riesling.
