If you don't know the wines of Willi Schaefer, you've been missing out. Considered the one of the best if not the best sweet wine producer in the world. Christoph and Andrea Schaefer farm a miniscule 4.4 hectares in the village of Graach with a sliver of vines in neighboring Wehlener Sonnenuhr. Their wines display a menagerie of fruit which is set as a backdrop to the cristaline minerallity oozing out of every bottle.

Fresh but extremely ripe pear, apple and Persian melon are wreathed in honeysuckle on the nose, and transformed on the glycerol-rich palate into a liqueur-like essence vibrantly and uncannily allied to fresh fruit juiciness and animating brightness. Wafting honeysuckle perfume and a slick of cashew butter add to the allure of a superbly sustained finish into which a squeeze of fresh lime injects invigorating, tingling refreshment." -David Schildknecht

"Made with a slightly higher proportion of botrytis, which was rare in this year anyway, the 2016 Graacher Domprobst Riesling Auslese (AP #14) displays a deep, mineral nose with tea flavors. Lush and piquant on the palate, with great precision and lingering salinity, this is a gorgeously elegant, juicy (ripe nectarines and peaches) yet highly finessed Auslese with a tickling and tensioned finish.
