Another new find for Flatiron from a producer whose passion and work in the vineyards deserves almost as much attention as the incredible wines he produces from them. Yann and his wife Séverine, share a passion for horticulture that directly informs their viticulture. Thanks to decades of regenerative farming their vineyards are teeming with life, including the once prevalent (then obliterated by chemicals) tulipe de vigne. The Sous Les Roses demonstrates the power of restraint, not often the focus of Pinot Noir (60%) and Pinot Meunier (40%), but fully realized here. Fermented and aged for 3 months in used oak then racked into stainless steel for another 3 before bottled under natural cork and matured for 5 more years. Only 4.5g/L of dosage is needed to balance out the refined structure. Flavors sway between red apple, green apple and barely there strawberry to toast, pie crush, lime peel, and a super high toned singing note finish that just keeps ringing, tingling the mouth with a salty minerality for a minutes on end.
