From old bush vines planted at 1,000 meters in the granitic soils of Cebreros (in the Sierra de Gredos, southwest of Madrid), “El Morisco” is a collaborative project between Raúl Pérez and like-minded growers. This is Garnacha far from the sun-drenched stereotype—light in body, lifted in aroma, and deeply etched with stony minerality.

The 2021 vintage leans cool and focused. Fermented whole cluster with native yeasts and aged in used barrels, the wine is layered with red fruit, wild herbs, and floral spice. There’s structure here, but it’s fine-grained and transparent—more about tension than tannin. Nothing feels forced. It’s the kind of wine that unfolds with air and rewards close attention.

While not certified organic the viticultural work is compliant with the standards of organic farming. All work is done by hand and harvest can take up to 3 days to complete.
Vinification
The grapes are fermented in oak vats of 2,500 liters with native yeasts. Fermentation takes place for around 1 month.
Aging
The wine ages is 1,000L French oak barrels for about a year and then 1 year in bottle before release.
