Domaine du Jaugaret is one of Bordeaux’s best-kept secrets. Tucked away in Saint-Julien and run by Jean-François Fillastre, this tiny domaine has resisted modernization for decades. The winemaking is unapologetically traditional: whole-cluster fermentation, minimal intervention, and aging in old barrels. Yields are low, everything is done by hand, and production is minuscule.
The 2018 vintage shows the ripeness of the year, but filtered through Jaugaret’s lens of restraint. Expect savory dark fruit, tobacco, dried herbs, and iron-rich minerality.
