The estate crafts calvados from 100% cider apples grown in the prestigious Pays d'Auge region using traditional double distillation over a wood fire. The calvados is aged in French oak casks for a minimum of 8 years, employing a 'perpetual' blending process that achieves remarkable consistency and complexity with each release. Roger Groult uses over 30 varieties of apple for a complex, intriguing flavor profile that captures the essence of Normandy's cider-making heritage. At 41% ABV, the calvados presents intense aromas of lightly cooked apples complemented by notes of vanilla and cinnamon. The palate is round, full, and rich—offering delicious flavors of sweet apples balanced by soft vanilla and subtle spice that brings warmth and complexity to each sip.
