A blend of both the Heathcote and Harcourt fruit
The soils are made from the famous ‘Cambrian soils’—red dirt made up of eroded basalt over limestone, shot through with greenstone and jasper
Fermented with indigenous yeast, 60% whole bunches
Aged in mostly large, neutral oak (Stockinger) and concrete tank for 16 months
Rested for a further six months in steel tanks
