Champagne Clandestin is the project of Jérôme Prévost protégé Meunier Mignon and Benoît Doussot, working in the under-the-radar Aube region in southern Champagne. Their wines highlight small plots of organically farmed Pinot Noir and Meunier, often from cooler, higher-altitude vineyards.

"Boréal" Blanc de Noirs Brut Nature is 100% Pinot Noir, sourced from north-facing vineyards in Buxières-sur-Arce, fermented with native yeasts in used barrels, and bottled with no dosage. The result is a Champagne that’s dry, serious, and intensely mineral, but with just enough Pinot flesh to round out the edges.

The 2022 base shows notes of baked apple, lemon skin, crushed chalk, and warm herbs, with a taut structure and a clean, savory finish. It’s less about fruit and more about energy and soil—a Champagne that drinks like it knows where it’s from.
