Brussels architect Maxime Ullens de Schooten was charged with restoring the Château de Marzilly in Massif de St-Thierry in 2012, and was so enamored with the site that he purchased it. He then discovered ungrafted vines around the castle and was inspired to make Champagne at his new estate, and Champagne Ullens was born. LPM stands for "La Petit Montagne," a reference to the fruit source for this 100% Meunier cuvée (the Massif de St-Thierry is also known as the "Little Mountain of Reims"). It is fermented and matured on lees in oak for 11 months followed by a further 36 months en tirage.
