A solera inaugurated in 1927—nearly a century of unbroken blending—yields one of the world's most concentrated sweet wines. Bodegas Alvear, Spain's oldest continuously family-operated winery since 1729 and now in its eighth generation, sun-dries Pedro Ximénez grapes on esparto grass mats until they become raisins, then presses them with a cider press over a century old. The intensely sweet must decants in concrete tinajas for four to five years before entering the solera system, where it ages an average of 30 years in American oak butts. Dark as motor oil, impossibly dense with fig, molasses, toffee, and coffee—a tiny portion of this wine is now over 90 years old. Drink slowly, introspectively: over ice after a meal, or alongside bitter chocolate, blue cheese, or aged nuts.

Aged for 20 years in a very old solera, this mahogany-colored wine offers aromas of caramel, saffron and tar, along with licorice and herbal notes. Very sweet and concentrated, the palate reveals a wild herb core with a balanced and potent mouthfeel. Saturation and weight on the palate are expected, but this has some (though not a lot) acidic cut. Deep flavors of fig and Nutella finish with nuttiness and warmth ."
