Grapes | 60% Pinot Meunier, 30% Chardonnay and 10% Pinot Noir

Vineyards | Eight vineyards in the Côteaux Sud d’Epernay and the Vallée de la Marne; avg 30-year-old vines; clay-limestone soils with marnes, chalky sub-soils.

Vinification | Grapes are picked by hand when fully ripe, and traditionally pressed. Alcoholic fermentation in vats and barrels according to grape varieties and plots; partial malolactic fermentation; aged on the fine lees for 6 months; 4.5 gr/l dosage.

All of his wines are aged in neutral barrels, do not go through malolactic fermentation and have just enough dosage to balance the wine and showcase the terroir.

Champagne boasts some of the world’s greatest luxury brands with Krug, Cristal and, of course, Dom Perignon. But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs.
