Eye of the partridge—the centuries-old technique of brief skin contact that produces Champagne's palest, most ethereal rosé. Doyard's version draws 75% Pinot Noir from the Grand Cru of Aÿ and 25% Chardonnay from Avize, two of the appellation's most celebrated villages. The family has made wine in the Côte des Blancs since 1677, and patriarch Yannick Doyard—whose father Maurice co-founded the CIVC in 1941—transformed the estate into a benchmark for mineral-driven Champagne. Now led by son Guillaume, the domaine farms biodynamically by horse with intentionally low yields, vinifies in 228-liter barrels, and ages a minimum of 48 months on lees. Disgorged October 2023 with just 3 g/L dosage, this is rosé Champagne of extraordinary subtlety—orange zest, rose petal, and sweet berry enveloped in pillowy mousse.

The Doyard family has roots in Champagne dating back to the 17th century and starting gaining recognition in the 70's for creating precise, mineral-etched champagnes. The domaine farms 10 ha of vineyards in Vertus and the Grand Cru villages of Le Mesnil, Cramant, Oger, Avize and Ay. The viticultural philosophy employed by the domaine is a ‘non-dogmatic’ approach to biodynamic farming with absolutely no herbicides or pesticides used. Most of the vineyards are worked by horse and yields are kept intentionally kept low, adding to the focused intensity that defines the house style.

In the cellar, all of the wines undergo very long lees aging—a minimum of 48 months, lending a vinous quality to the wines that have become the envy of Vertus. Every single decision made in the vineyard and cellar are geared toward making the most expressive, terroir focused Champagne possible.

"Informed by high-maturity Pinot Noir sourced from a vineyard in the village of Aÿ-Champagne, which is pressed slowly and gently, delivering a subtle pink hue, and complemented by Chardonnay from Avize, Doyard’s 2019 Extra-Brut Grand Cru Millésime Œil de Perdrix has turned out very well. Vinified in 228-liter barrels of different ages and disgorged in October 2023 with three grams per liter dosage, it wafts from the glass with aromas of orange zest, roses, sweet berries and spices. Full-bodied, concentrated and enveloping, with ripe but vibrant acids, delicate phenolic structure and a pillowy mousse, it concludes with a long, perfumed finish.
