Stéphane Erissé was a builder before he apprenticed under Antoine Foucault of Domaine du Collier. He went on to purchase a small domaine (just 3ha) of vines which had been farmed organically for 20+ years. He does not use any chemicals in the vines, works with minimal intervention in the cellar and adds just a touch of SO2 at bottling, if any.

From clay-rich soils with a high granite content, Carbone is made from 70 year old Cabernet Franc vines. The fruit is destemmed, with the goal of showing off purity of fruit rather than extraction or dense tannins. Supple, lush and earthy, with no lack of fresh forest fruit.

Cabernet Franc with Pinot Elegance

It wouldn't surprise me to see Domaine Andrée become a cult producer in the near future, because the winemaking here is truly next level. Like Clos Rougeard, Andrée is making seriously elegant Cabernet Franc that largely avoids the 'classic' Loire Cab-Franc vegetal flavors, and focuses more on fruit purity and fine texture. But this is more lifted the Rougeard's wines, and rather Burgundian in color and texture. Flavors of sweet raspberries, violets, and pipe tobacco, and damp earth move down the palate like a silky, ribbon-like fashion. Delicious!
