An 8,000-year-old winemaking method meets a near-extinct grape variety. Asuretuli Shavi—discovered in the 1830s near the village of Asureti—is an all-female, wild red variety that nearly vanished. Niko Chochishvili (7th-generation, former US Army Captain) revives it using qvevri: large clay vessels buried underground where whole grapes ferment for five to six months. UNESCO Intangible Cultural Heritage in action. Wild strawberry, ripe cherry, blueberry, rose, and developing spice notes. Full-bodied yet fresh.
