Benoit Marguet is a shaman. He is a fervent follower of biodynamics, an agricultural system that has little basis in science, but despite that, seems to work. He plows his vineyards with a horse that feeds on only the local flora, and he believes that it is a part of his terroir. He does not purchase his biodynamic preparations, like everyone else, but instead produces them entirely from locally-sourced materials.

The Shaman is his appropriately-named multi-vintage Extra Brut. It is consistently excellent.
