Vineyard These 60 year old vines are densely planted at 5,000 vines per hectare. Orientation South-facing parcel Soil Siliceous-clay and sandy topsoils over limestone Viticulture Farmed organically; grapes are hand harvested. Vinification Vinified without stems, in an indigenous yeast fermentation that lasts for 25 days. They use open-top wood containers for vinification, and pump-over and do pigeage once a day Aging The wine is aged in large used wood barrels for 18 months, then bottled unfiltered.
