Asuretuli Shavi is a nearly forgotten Georgian red grape, native to the foothills of the Trialeti Range in the Shida Kartli region. At Kapistoni, a small family winery committed to organic farming and traditional techniques, this grape is brought back to life through fermentation and aging in qvevri (large clay amphorae buried underground), with no additives, fining, or filtration.
The 2021 vintage delivers a wine that’s both rustic and refined: aromas of blackberry, dried cherry, clove, and forest herbs, with a dusty, savory edge and fine natural tannins. The qvevri aging adds grip and texture while preserving freshness and clarity. It's medium-bodied, slightly wild, and finishes with a clean, mineral snap.
