Seven years on lees—more than double the required minimum—transforms a cool 2016 vintage into something refined and mineral-driven. Seventy percent Pinot Meunier and thirty percent Pinot Noir, fermented in both oak and stainless steel for textural complexity. The cool vintage meant Meunier developed the depth usually reserved for Noir, and the extended lees contact built richness alongside precision. This is what patience sounds like in a glass: creamy mouthfeel, mineral finish, fresh acidity cutting through years of lees aging. Proof that cool years make exceptional Champagne.
