Grapes | 100% apples

Vineyards | Naturally grown apples, including some biodynamically farmed orchards, from 30- to 250-year-old trees in Champagne (west of Sezanne) and Normandy.

Vinification | Fermentations in oak last for up to a year in a cold cellar in Verzy, followed by the 2nd fermentation in bottle using natural sugar from apples rather than sugar. Cider is kept on lees for at least 12 months before release.

But it’s also home to hundreds of small dynamic producers—farmers who grow their own grapes (often organically) and make (often with natural methods) tiny amounts of pure and absolutely delicious wine that reflect the individual personalities of their villages and terroirs.
