Frédéric Savart nearly became a professional footballer—he signed a youth contract with Stade de Reims before returning to the family vines in 1993. That athletic precision now channels into one of Champagne’s most admired artisanal operations: four hectares in the Premier Cru village of Écueil on the Petite Montagne de Reims, farmed and vinified entirely by one man. Les Noues is his only single-vineyard cuvée, deemed the one lieu-dit worthy of standalone expression. Old-vine Pinot Noir fermented in demi-muid and rested ten months on gross lees, bottled at zero dosage to reveal the terroir’s pure chalk minerality. The 2021 vintage—marked by devastating spring frosts that produced the smallest harvest since 1985—yielded wines of concentrated fresh elegance. Orange rind, crisp pear, red berries, and a long chalky finish.

"Disgorged à la volée for tasting in February 2025, Savart's 2021 Écueil Les Noues originates from a cool growing season marked by a rather rainy June and July. The only single parcels deemed suitable for standalone cuvées were La Moufle and Les Noues, which, as Savart recalls, were largely spared from mildew pressure. Opening in the glass with a bouquet of orange rind, crisp pear, fresh red berry fruit and brioche, it is medium-bodied and bright, with a refreshing core of fruit, racy acidity and a long, chalky finish. Given the small harvest, Savart did not purchase his usual quantity of new barrels, resulting in this cuvée seeing minimal new wood—a stark contrast to previous iterations, which were aged in about 50% new oak." -Kristaps Karklins
