Third-generation Mallorcan winemaker Cati Ribot launched her own label, Ve d'Avior ("from the past"), in 2019 to revive indigenous grapes most of the world has forgotten. Son Llebre Blanc is Malvasia and Giró Ros grown on volcanic soils near Santa Margalida. Organic since 2012, biodynamic treatments since 2014. Very low intervention in the cellar, minimal sulfur. Cati trained as a sommelier in Barcelona before taking over winemaking from her father in 2009. This is wine from varieties you've likely never tasted—a true exploration.
