Traditionally crafted Fino from one of Jerez's last entirely hand-operated bodegas—no electric pumps, just manual tools passed down since the bodega's founding in 1830. Master cooper José Antonio Sierra started this operation, originally called La Merced, building barrels before transitioning to sherry production. Now run by Dr. Carmen Borrego Pla, daughter of the previous owner. The solera system uses hand transfers every four months with traditional rociador, canoa, jarra, and sifón tools. Minimal filtering done manually with a sieve; no SO2 added. Some soleras here exceed 60 years old, with a few approaching 100.
