Five hectares across eighteen plots in Ambonnay Grand Cru—that's the entirety of the Billiot universe, and the Essence bottling represents its most concentrated expression. Pure Pinot Noir, very lightly pressed to keep the juice clear, with no malolactic fermentation to preserve bright acidity. Six months in seasoned barrique followed by seventy-two months—six full years—on the lees, then disgorged with zero dosage. The 2017 vintage was treacherous: spring frost, disease pressure, and the rainiest August since 2001 demanded severe selection, but what survived was exceptional. The result is a Blanc de Noirs of unusual depth and vinosity—red fruit, honey, lemon, and apple interwoven with tertiary complexity from extended lees contact. Released in numbered bottles, available only by reservation.
