California's cult sparkling wine—Michael Cruse taught himself méthode champenoise from an 1899 French textbook, and the waitlist speaks for itself. This Blanc de Noirs comes from Charles Heintz Vineyard at 900 feet on Sonoma Coast, just above the fog line on Goldridge sandy loam soils. Pure Pinot Noir, hand-riddled, hand-disgorged, minimal dosage. The grower-Champagne philosophy applied to California: single vineyard, single vintage, wild fermented. Marzipan, brioche, and sea air with the saline minerality of its coastal origins.Cornas-like Syrah from steep 40% slopes, 1,500 ft. 13 years evolved—gamey, peppery, olive character.
